Spiced Banana Cake

DAINTREE DRIZZLE - Medium Chilli Oil

A sweet spicy snack that uses our medium chilli oil to add a fruity chilli spice.


Ingredients

Cake

  • 3/4 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tbsp Daintree Drizzle medium chilli oil
  • 1 egg
  • 1 banana (over ripe)
  • 40g butter
  • 1/4 cup buttermilk
  • 2 pinch nutmeg
  • 2 pinch sumac
  • 3/4 tsp cinnamon
  • 3 pinch salt
  • 25g brown sugar
  • 50g white sugar

Icing (optional)

  • 20g butter
  • 65g cream cheese
  • 1 tsp vanilla paste
  • 1 pinch salt
  • 3/4 cup icing sugar

 

Directions

  1. Preheat oven to 190c
  2. Mix flour, salt, baking soda, baking powder, cinnamon, nutmeg & sumac in a bowl and set aside
  3. Combine butter, white sugar, brown sugar & Daintree Drizzle until pale and creamy
  4. Add egg to butter/sugar mixture and mix until just combined
  5. Add 1/3 flour mix and 1/3 buttermilk to the butter/sugar mixture (reapeat 3 times until all combined)
  6. Mash up banana and fold through mixture
  7. Tip into lined cake tin and cook in oven for 25 min
  8. Beat all icing ingredients until smooth
  9. Wait until the cake has cooled then ice
